Take a walking tour - either led by a docent or self-guided-around parts of downtown's 55 blocks. You can also visit the Amelia Island Museum of History, which boasts a story-telling tradition. There are plenty of local places to shop and dine downtown. Try the Pirate's Punch at Palace Saloon, the oldest continously operated drinking establishment in the state.
